In celebration of Father’s Day, Chef Fredrik Berselius of Aska shares a dish that embodies the spirit of the occasion. It is rooted in tradition, nature, and the quiet joy of spending time with loved ones.
Fredrik’s approach to cooking is deeply personal. Inspired by his Swedish upbringing, he begins with golden potatoes foraged upstate and handpicked floral blossoms from his garden. These accompany a delicate endive salad prepared by his daughter, Alida, a simple gesture that speaks to the importance of sharing meaningful time together.

At the center of the plate is a seared white fish, another dish complemented with a large single prawn, centered with boiled golden potatoes. The fish, finished with a spoonful of Imperial Ossetra caviar. The caviar’s balance of brine and buttery richness is elevated by a velvety cream sauce and fragrant dill oil.
