Originally from the southern coast of the Caspian Sea, Persian caviar, known as Persicus, is now a rare, prestigious breed, which combines the firm yet melting texture of Ossetra with an exquisite creaminess, freshness, and savory gush of brine.
Persian caviar has a rich history dating back to ancient Persia, where it was first recognized for its potential medicinal properties and believed to enhance strength and vitality. While white sturgeon were known to the seafaring populations of antiquity, the 'caviar' obtained from their eggs does not appear until the 9th century. The Persians were the first to consume sturgeon eggs from the Caspian Sea. Caviar then turned up at Russian courts where the Tsars would serve it at their lavish Imperial banquets.
However, after centuries of over-fishing, for many years, caviar from the Caspian sea was banned from being harvested or sold. Petrossian’s commitment to sustainability and species preservation has allowed us to cultivate relationships with exclusive caviar farmers from around the globe, and preserve rare species of sturgeon for generations to come.
