Produce Ideas

Fresh berries are always best, as the flavors in most types of berries can change dramatically over time with storage. We recommend finding seasonal options that match your local growing seasons whenever possible. Farmer’s Markets and locally grown produce offer richer flavors and more health benefits than commercially grown alternatives in many cases.

When you can’t get fresh locally grown berries, check your gourmet grocery store to see what they’ve been able to bring in from outside of your region. The fresher, the better because that means less time in storage and transport. Early season strawberries and raspberries are great for spring, and as the season moves on, blueberries, blackberries, and boysenberries often become available as well.

In addition to berries, fresh veggies are also a great addition to brunch. Crisp lettuce, leafy kale, radishes, and cucumbers also make a great base for topping when combined with caviar, smoked salmon, and crème fraîche.

Protein Options

Smoked Salmon Varieties

Classic: Tsar-Cut or sliced, Petrossian’s smoked salmon is second to none. The Tsar-Cut option is the loin of the fish that was traditionally reserved for Tsars, hence the name. Pre-sliced options are available in both Classic which is available in 7 oz and 1.1 lb sizes, as well as in a Grand Sliced option that is a hefty 2 lb cut, excellent for a larger gathering or that smoked salmon lover in your life! 

Flavored: Petrossian offers two flavored options of smoked salmon. Our Dill-Marinated variation is a brunch favorite. It's gently cold-smoked using our unique family method, then marinated with dill and pepper for a flavored taste that's both deep and bright, along with a satiny texture you won't find with other smoked fish. Our Black-Sea Spiced salmon is marinated in a potent blend of spices using a 100-year-old Petrossian family recipe. It's then cold-smoked at a snail's pace to preserve the complex flavors and enhance its silky texture. Either - or both - are a wonderful choice for a flavorful brunch.

Unique: When you’re looking for something completely different, we recommend our Souhoï Style Tsar-Cut® Smoked Salmon. Smoked, smoked, and then smoked again, the unique texture toes the line between juicy fish and a jerky exterior. We’ve hand-trimmed the plumpest cuts and salted them to perfection. This has imbued the salmon with a robust, dark smoke that is sure to provoke the senses. Excellent when topped with sunny-side-up eggs with a slightly runny yolk and a dollop of Daruenki Caviar.
