The Petrossian "Gold & Earth" Burrata

Grilled Miso-Glazed Delicata Squash with Burrata and Daurenki Caviar

For a new take on an Old World favorite, we’ve paired fresh, creamy burrata with roasted delicata squash and a touch of Daurenki Caviar for a delightful meal. This dish breaks tradition by pairing the chilled, creamy caviar with the warm, caramelized sweetness of roasted squash and the milky luxury of Italian burrata. 

The Ingredients

  • 30g to 50g Tsar Imperial Daurenki Caviar
  • 1 Delicata squash (sliced into thin "half-moon" rings)
  • 1 ball of fresh burrata cheese
  • 1 tbsp white miso paste
  • 1 tbsp honey or maple syrup
  • Extra virgin olive oil
  • Fresh chives (finely minced)
  • Optional: A few toasted pumpkin seeds for crunch

The Preparation

  • The Glaze: Whisk together the miso, honey, and a splash of olive oil until smooth.
  • The Roast: Coat the squash rings in the glaze and roast at 200°C (400°F) until the edges are caramelized and the flesh is tender (about 15–20 minutes). Let them cool slightly. You want them warm, not hot, so they don't melt the caviar.
  • The Base: Arrange the warm squash rings on a flat platter. Gently tear the burrata and place small "clouds" of the creamy center over the squash, or place the burrata in the center of the squash, based on your preference,
  • The Crown: Use your mother-of-pearl spoon to place a generous dollop of Daurenki Caviar directly onto each piece of burrata.
  • The Finish: Garnish with a tiny sprinkle of chives and pumpkin seeds. No extra salt is needed—the Daurenki provides the perfect savory finish.

The lineage of the Daurenki means it has a high fat content. When it meets the warm miso and the creamy burrata, the beads begin to soften slightly, creating a rich, savory "butter sauce" that elevates the humble squash into a three-star appetizer.

The "Petrossian Earth & Sea" Martini

To complement the earthy, buttery notes of the Miso-Squash and Daurenki dish, you need a cocktail that offers structural contrast, something crisp, cold, and slightly savory to cut through the richness of the burrata and the caviar’s creaminess. Enter the Earth & Sea Martini. This isn't your standard martini; it uses a rinse technique to provide a whisper of truffle and brine without overpowering the delicate Daurenki beads of the dish it complements.

The Ingredients

  • 60ml (2 oz) Premium Vodka: Choose a neutral, wheat-based vodka such as Beluga, for a silky mouthfeel.
  • 10ml (1/3 oz) Dry Vermouth: A crisp, floral French vermouth.
  • A Truffle Rinse: 2 drops of either Petrossian White Truffle Oil. For a milder flavor, the Summer Truffle Olive Oil provides a touch of truffle with a quiet smooth finish. For a more aromatic earthy flavor to balance out the meal, we love the Piedmont White Truffle Olive Oil.
  • The Garnish: A single cocktail onion or a lemon twist, depending on whether you prefer savory or citrus.

The Method:

  • Chill the Glass: Place a coupe or martini glass in the freezer for at least 10 minutes.
  • The Rinse: Add 2 drops of truffle oil to the chilled glass. Swirl it to coat the sides and discard any excess.
  • The Stir: In a mixing glass filled with plenty of ice, combine the vodka and dry vermouth. Stir gently for 30 seconds (never shake a martini of this caliber as you want it crystal clear and bubble-free).
  • The Pour: Strain the mixture into the truffle-rinsed glass.
  • The Finish: Garnish and serve immediately alongside your Daurenki appetizer.

The truffle oil rinse bridges the gap between the miso-roasted squash and the earthy undertones of the caviar.
