Seafood Appetizers

When it comes to summer soirées, seafood appetizers are all the rage. A simple crostini or whole grain cracker can be topped with crème fraîche and caviar and voila! Gourmet appetizer! But why stop there when with a little creativity, and a touch of inspiration from a caviarlog®, you can create something even more spectacular?

Start with the basics: a whole grain cracker or crostini with just the right amount of crunch. Be sure that it’s not a flavored cracker as you want the flavors of the seafood to be subtle and pleasing to the palate without having to compete with the base. Often, flavored crackers can be a bit overpowering and do better for basic dips and spreads, and at Petrossian, we’re anything but basic. 

Next, spread a dollop of crème fraîche on each, and then sprinkle with any of these options, preferably just one per cracker:

    •    Tarragon - a perennial herb with a distinctive anise-like flavor, commonly used in French cuisine. It's known for its delicate, slightly sweet, and peppery taste.
    •    Dill - with a complex flavor profile characterized by herbaceous, slightly sweet, and tangy notes. We recommend fresh dill, which offers a bright, grassy, and lemony taste.
    •    Rosemary - with its fragrant, piney, slightly citrusy, and minty notes, it can be a great addition to many seafood dishes, particularly those with richer flavors that can stand up to the herb's intensity.

Once you have your crackers prepared, add your seafood, pairing according to the flavor profile of the herbs you’ve selected. 

    •    Targgon’s delicate flavor is a lovely sweet and peppery complement alongside half a hard-boiled egg, and the option of either your choice of petite sardines for a rich addition to the cracker, or smoked salmon tartare seasoned with chives, shallots, dill, pepper and a squeeze of lemon that brings out the tarragon and egg.     •    Dill pairs well with shrimp and smoked salmon for a bright, lemony flavor. The rosemary will pair best with duck prosciutto and lobster, bringing out the richness of the duck alongside the succulent lobster tail. Tossed Salad with Seafood

For a refreshing yet healthy salad that won’t overpower the flavors of the seafood, we love a combination of baby spinach, buttercrunch lettuce, and chopped romaine. Add thin sliced cucumbers, chopped chives and parsley, and fresh sliced radishes for a kick of flavor. Add sliced hard boiled eggs, some salmon roe for a full pop and a gush of tangy, sweet flavor.
