The Petrossian Family has been smoking salmon and other smoked fish for nearly as long as we’ve been crafting caviar. Hot Smoking is famous for producing subtle, more nuanced flavors of smoke and wood. Another unique offering is our Pastrami Style Trout. From the choice loin of the trout fillet, we’ve produced a succulent, smoky slice, which has spent seven magical hours in our cold smoker. Finally, we’ve arrived at the last of our smoked seafood selections: eel, cod, and scallops.
