Ranging in color from a deep, rich amber to bright, viridian green, Alverta caviar is well known for its bold flavor and distinctive, semi-sweet finish. Because its flavor is so pronounced, Alverta is an ideal caviar for topping a blini with cream or working into salads, pastas and other dishes.

There are many types of caviar, each coming from a particular sturgeon species. Beluga, Ossetra and Baïka caviar all come from different sturgeon and provide uniqiue tastes and textures. For tasting purposes and when buying caviar online, think of them like different wine grapes (Cabernet, Pinot Noir, Chardonnay). Each has its own potential and offers its own experience. The best way to gain a better understanding of caviar is to try each type and find your favorites.

With Caviar, there is no good, better, best. Like wine grapes, each species of sturgeon produces a unique type of caviar. Baïka offers a briner burst, while Kaluga Hybrid caviar tends to be buttery in flavor. Within each varietal, though, individual batches vary it terms of quality. This can involve firmer texture or more nuanced flavors for any given type. At Petrossian, our caviarologists test and then grade each batch (Royal, Tsar Imperial, etc.) to indicate the quality of that batch. We recommend you find your favorite varietal and then select the grade which suits your tastes, event and budget best.

Petrossian Caviar comes from the most prestigious farms all across the globe. In the USA, certain restrictions prevent us from importing Beluga caviar or Russian caviar, for example, but we are tirelessly searching the world for the most dedicated caviar producers to work with. As a result, our caviar comes from almost every continent, including incredible farms in Uruguay, China, Israel, Madagascar, Italy and even right here in the United States. However, we judge our caviar on taste and texture only, regardless of origin. For example, our Special Reserve batches are blindly selected for quality and not limited to one farm or region, so we do not specify a country of origin on any individual tins.
