Raise Your Caviar IQ
There are many types of caviar, each coming from a particular sturgeon species. Beluga, Ossetra and Baïka caviar all come from different sturgeon and provide uniqiue tastes and textures. For tasting purposes and when buying caviar online, think of them like different wine grapes (Cabernet, Pinot Noir, Chardonnay). Each has its own potential and offers its own experience. The best way to gain a better understanding of caviar is to try each type and find your favorites.
With Caviar, there is no good, better, best. Like wine grapes, each species of sturgeon produces a unique type of caviar. Baïka offers a briner burst, while Kaluga Hybrid caviar tends to be buttery in flavor. Within each varietal, though, individual batches vary it terms of quality. This can involve firmer texture or more nuanced flavors for any given type. At Petrossian, our caviarologists test and then grade each batch (Royal, Tsar Imperial, etc.) to indicate the quality of that batch. We recommend you find your favorite varietal and then select the grade which suits your tastes, event and budget best.
Everywhere. In the past, caviar was almost exclusively produced in the Caspian Sea, but today it can be sourced from all over the world. Petrossian has been leading the effort to support sustainable caviar farms on almost every continent and many of our most sumptuous caviars now come from places as exotic as Israel, Bulgaria, China, Madagascar and Uruguay. Even America is home to some of the world's most prestigious caviar farms. Only Petrossian has the personnel and expertise to scout these farms and bring the world's very best caviar to your table.
All Petrossian caviar (or orders containing caviar) is shipped overnight via Fedex. Overnight shipping to the continental US costs $39 for weekday deliveries and $54 for Saturday delivery. We charge $54 for any delivery to Alaska, Hawaii or Puerto Rico.
Unfortunately, we cannot deliver overnight on Sunday or Monday, because Fedex does not transport on Sundays. This website cannot deliver to any address outside the US. For those orders, please visit us at Petrossian.fr.
All Petrossian caviar is carefully packed with copious icepacks inside a specially-designed isothermic tote bag, custom-built for caviar shipments. These insulated containers have been thoroughly tested to keep your order at peak temperature for over 48 hours, though we only ship caviar for 24-hour, overnight delivery. Please check your caviar upon arrive to ensure that it is still cold and immediately refrigerate at 38 degrees Fahrenheit until you choose to serve it. Please do not hesitate to reach out to us, if you have any concerns.
